1 lb. fresh okra (small pods) 1 large ripe tomato olive oil salt pepper red pepper flakes cider vinegar
Cut the stems and tips off the okra and slice. Chop up the tomato finely. Using enough olive oil to cover the bottom of a decent-sized cast iron pan, fry the okra until it starts to soften, then add the tomatoes and cook slowly, adding a little water if the tomato juice starts to run out. Add salt, pepper, and a small amount of red pepper flakes; cook until both vegetables are done. Add about two capfuls of cider vinegar. Makes two large servings or three average ones.

MmmmmMm...I love okra!! Being from Louisiana I eat it often! Boiled is best! Yummm!
