1 lb fresh asparagus 1 bunch green onions or scallions 1 juicy lemon 1/3 cup olive oil (approximate) salt, pepper, pinch of sugar (to taste) pinch of red pepper flakes
Bend the asparagus stalks until they break; steam the upper stalks until tender. (Throw away the bottom half, or keep it for soup.)
Clean and thinly slice the green onions.
In a jar with a cover, combine the juice of the lemon (remove any seeds), olive oil, salt, pepper, sugar, and red pepper flakes. Close jar and shake vigorously until ingredients are combined.
Line up the warm asparagus in the bottom of a bowl, cover it evenly with the green onions, pour the olive oil mixture over it, and toss everything together. Refrigerate for awhile, ideally several hours or overnight. Stir up once in awhile if you have the chance.
